Alrighty - just bought some parts after lots of delays, analysis, and number crunching:

MOBO: Gigabyte Z690 AORUS ELITE (DDR4 - DDR5 won't ramp up for a couple cycles - performance will be stellar with DDR4 @ 4000)

SSD: SAMSUNG 870 EVO 2TB

Looking forwards to having a new comp that can handle all of my tabs/apps. Next step is arm for the monitors and deciding on GPU. Might go cheaper now in anticipation of new GPUs end of this year but we'll see. Already have a 2K 34" widescreen that's currently struggling with my R290X.

Stuff ages too fast anymore.

I have a 3060 with three 2K monitors, runs fine with an AAA game and a movie on a second monitor. With this rig I'd go for a 3070 minimum for longevity.

It's tempting...prices on GPUS are going down quicker now as well. You can snap up a used 3060 ti on ebay for $300 now.

What monitors do you have? I wish I'd waited a little longer but I went with a Gigabyte M32Q - You can get a G7 for $599 now. Next step is getting an arm and purchasing some ancillary monitors. I have a very old AOC monitor to my left and this one in front of me right now - I'd like a vertical monitor to my right and a horizontal above this one.

We'll see - it's gonna be fun installing the M2 SSDs under the heatsinks. And I got a Noctua NH-15D chromax air cooler for my CPU - the Torrent case is designed to maximize airflow and I don't want to deal with the hassle of an AIO hookup especially with my socket.
