Background: I belong to a service organization. I have been tasked with arranging a breakfast for ~100 people, which consists of the members and their immediate family. I am working with a pretty decent caterer to set the menu. Most of the times, when you go to a service organization breakfast, it kind of sucks. It has all the fixings of a traditional breakfast, yes, but it isn't great. I'd like to do something that isn't just trays of sliced ham, back bacon, regular bacon, eggs, hashbrowns, fruit, etc.
I know some of you guys like to eat, and have traveled far more extensively than I. I'd like some dishes that are a bit unique, with some international flavour. I already have Mexican food checked off, as the caterer herself is a Mennonite Mexican and does a f**k great burrito. I've done some Googling on the matter and found a bunch of different ethnic breakfast foods, but I'm looking for personal recommendations.
Keep in mind that things do have to be balanced. It can't be too exotic, and I'd only be able to get away with 2-3 unique foods - which means it will have to be appealing to most tastes or else it'll be wasted. The rest of the breakfast will be traditional.
