Because electability is about which primary candidate would fare better in a general election, and is an important selling point among primary choices. You're just using the word incorrectly to give Clinton a point that actually belongs to Sanders according to all polling data.
The funny thing about everyone who admits Sanders is better but insists on supporting Clinton right out the gate is that you literally have nothing to lose by supporting Sanders right now. If he loses, you can still vote for Clinton in the general. Democrats are afraid to ever stand up to the party establishment though, and I can see from the discussion on this forum that most of you are already more interested in general election partisan dickwaving about substanceless nonsense at this point.
