we kinda did get to see the whole Mongols vs Europeans thing play out a few centuries later with the Turks vs the Hapsburgs. The Ottomans, being steppe folk themselves, fought and organized in a fairly similar fashion to the Mongols.
Outcome...they do very well in the East but get bogged down in the mountains and forests of Germany.
I've read some accounts that state the Mongol troops were getting mighty cranky about the whole castle phenomena, ie big nasty fort, virtually 0 booty.
in the east they used fortifications to defend important stuff, in the west forts were more used like a Bond villain uses his lair...
