Yeah, I don't think that you can remove natural trans fats from things like beef (assuming it's in there - I'm not a nutritionist) and still have "beef" left over. But, you can remove artificial trans fats from pizza, replace with something else, and still have pizza.
To me, if there has to be a line, that's it. If you can ban a harmful substance and still have a comparable end result, without undue burden upon the preparer, then ban it. If such a ban results in a measurably different end product, or places undue burden upon the preparer, then there shouldn't be a ban.
