Jesus. My knowledge of food history is severely lacking. But fried okra is good. Once went to a soul food restaurant up in the northeast, best damn thing.
I swear to God though all my southern uncle would eat was fried chicken and potato chips. Never saw a green thing on his plate, not even relish. That was of course until he had to change his diet for health reasons, now he gets it as an occasional treat.

Yeah I don't think the south was ever a poster child for good health. Some of it has to do with poverty as well, which is where you'd need to distinguish cultural norms from other factors.
