the cultures of eurasia are long lived and storied. the cultures of the americas are very young. yes, there are some natives, but they were absorbed into their conquerors, especially as a result of the encomienda system which basically made indians slaves but you couldn't be one if you were a mestizo like myself and part white part native, so natives ended up marrying spanish often so that their decdendants would have freedom, and in the processes becoming less native in culture and more latino. plus many of their signature foods just became things like "tomato sauce" in italy (because tomatos are american) and they ended up having fry bread as "native"... fry bread. which is lard and wheat, things they got because we gave it to them on their trail of tears. anyway. basically because these countries are so young, with young culture associated with them, thats why you think there is no breath. i think another problem is there's lots of local foods (like fruits) that just are difficult to ship up here from the jungles of south america.
